Husband and wife team, Scott and Laura Smith first came to attention amidst Edinburgh's culinary scene with the opening of their restaurant/dining experience Norn. Sadly Norn is no more, but fear not gastrofans, the dynamic duo are back on the scene with their new restaurant, Fhior. If its opening months are anything to go by, the capital's residents are in for a treat.

Translated from the Gaelic 'true', Fhior promises to live up to its name, offering honest, authentic Scottish food in a modern setting. The restaurant is divided into two parts – a larger dining area where sit-down meals are served and a smaller, more informal lounge bar/café to the front.#

The pared-down vibe continues into the service. Simple though it may be, this is contemporary dining with a twist. Rather than being presented with a full menu, evening diners are presented with a list of seasonal ingredients, the chance to specify dietary requirements and the choice of either a four or seven course sampling menu. After that, you're left in the chef's hands, as he creates a whirlwind of taste sensations based around key, locally-sourced ingredients.

If you're coming for lunch (served on a Friday or a Saturday), then expect to find yourself in control of the menu, as you get to choose from a selection of individual plates custom-made to your preference. The food arrives as and when it is ready and additional dishes can be ordered throughout the meal. The casual dining style might take you by surprise at first, but it'll quickly become infectious as you tuck into the lovingly-prepared dishes and wonder why on earth more restaurants don't follow this format. Top this off with some carefully paired wines, chosen by somelier Stuart Skea, and you're on to a winner.
