When local Edinburgh lass Amanda Brown had to overhaul her diet for health reasons, she could little imagine how healthy eating would impact upon her whole life. Fast forward a couple of years and she's now the proud owner of Pumpkin Brown, one of the capital's freshest foodie pit stops.
What was once a popular food stall is now a permanent resident business admidst the bustle of the capital's Grassmarket, and though the premises may be wee (there are only a couple of tables indoors), there's a whole lot of flavour packed in to those four walls.
Pumpkin Brown specialise in creating delicious raw vegan food, and from the range of dishes on offer, it's clear that they're determined to prove that healthy does not equate boring. The salads are bursting with colourful options, from roasted sweet potato to gorgeous goji berries, and the daily hot dishes vary from flavorsome chilis to meat-free bolognaise.
